Soybean
Processing in the Chimbas Ward (2002)
To obtain
soybean milk we proceed in the following manner:

1. We
soak the soybeans for 12 hours.

2. Then
we rub the beans to separate the seed coat then rinse them several
times.

3. Removing
the seed coat requires rubbing and rinsing the beans several times.

4. Then
we process or blend the beans.

5. After
blending, we place the mix in a large pan. One part of beans to
3 parts water.

6. The
pan is placed on the stove and the mix is boiled for 40 to 45 minutes.

7. The
purchase of a new burner has improved the process by reducing the
amount of time it takes to cook the soybean/water mix.

8. After
boiling, we strain the mix to obtain the milk, which can be used
just like cow's milk.

9. From
100 grams of soybeans we obtain one liter of milk; in other words
10 liters of milk from 1 kilo of soybeans.

10. Besides
the milk, the residue, as this sister is showing, is useful to make
steaks, hamburgers, cookies, empanadas, ect; and to fortify beef.
11. Besides
the milk and soybean residue, Bishop Ripoll provides 2 to 6 eggs,
depending upon the size of the family, to make soybean steak patties
(milanesas).
